1. Brownies

Prep Time: 4 min.          Cook Time: 25 min.          Total: 30 min.          Servings: 20

You can never go wrong with brownies! Whip these up to make any ordinary day special.

Ingredients: 

  1. 225g plain flour
  2. 60g cocoa powder
  3. 400g caster sugar
  4. 225g melted butter
  5. 4 eggs
  6. 1 teaspoon vanilla extract
  7. 1/2 teaspoon salt
  8. 1/2 teaspoon baking powder
  9. 60g walnut halves (optional)

Instructions:

  1. Mix all the dry ingredients first
  2. Add wet ingredients and mix well
  3. Pour the batter in a greased baking tray (23x33cm)
  4. Bake at 180° C for 20-25 minutes.
  5. For fudgy brownies, toothpick inserted in the centre of the tray can have remains of the brownie on it when removed. For cake like brownies, the toothpick should come out clean.
  6. Let the brownie cool, and slice it into squares.

2. Almond Shortbread Cookies

Prep Time: 15 min.           Cook Time: 10 min.          Total: 25 min.          Servings: 48

These soft little cookies are great to gift your friends or neighbors. Put them in a cute pouch or wrap them on a plate and present them to your loved ones.

Ingredients:

  1. 4 cups sifted flour
  2. 2 cups softened butter
  3. Sliced almonds
  4. 1 cup sugar
  5. ½ tsp. almond extract
  6. ½ tsp. salt
  7. 1 egg
  8. Sugar to sprinkle

Instructions:

  1. Whip all the wet ingredients and salt in a bowl until it feels light and fluffy (around 5 min.)
  2. Add flour to the mixture gradually, ½ cup at a time, beating well each time.
  3. When the consistency of the batter is dough like, roll it out with about ½ inch thickness.
  4. Use a cookie cutter to cut out the cookies in desired shape.
  5. Place the cookies on a baking tray, lined with parchment paper, and brush them slightly with beaten egg.
  6. Sprinkle sliced almonds and sugar on the cookies.
  7. Bake at 190° C for 10 min.
  8. Let them cool and the cookies are ready to eat!

3. No-Cook Chocolate Fudge

Prep Time: 3 min.             Cooling Time: 1-2 hours

This is such an easy recipe that it requires little effort. Perfect to overcome odd-time cravings!

Ingredients:

  1. 1 can sweetened condensed milk
  2. 2 cups semi-sweet chocolate chips
  3. 1 teaspoon vanilla extract

Instructions:

  1. In a microwave safe bowl, add chocolate chips and condensed milk. Place it in microwave for 1 min.
  2. Let the bowl sit for another minute, and then begin to stir the melted mixture. Place the bowl in the microwave for another 30 seconds if required.
  3. Stir till the chips have melted and the mixture is smooth. Then stir in vanilla extract.
  4. Pour out the mixture in a pan greased with butter. Let it cool completely. (Can be placed in the refrigerator to speed up the process)
  5. Cut the fudge into 1 inch squares, and store in an airtight container. Fudge does not require to be refrigerated. (You can roll the chocolate fudge pieces in shredded coconut mixture if you like)

4. Coffee Cake with Cinnamon

This is a simple and delicious recipe for homemade coffee cake that can be made from scratch, with all the ingredients you already have in the kitchen.

Ingredients:

For Cake:

  1. 3 cups flour
  2. ½ cup butter, melted
  3. 2 eggs
  4. 1 cup sugar
  5. 2 tsp vanilla
  6. 4 tsp baking powder
  7. ¼ tsp salt
  8. 1½ cups milk

For Topping:

  1. 1 cup butter, melted
  2. 1 cup brown sugar
  3. 2 Tbsp flour
  4. 1 Tbsp cinnamon

For Glaze:

  1. 2 cups powdered sugar
  2. 5 Tbsp milk
  3. 1 tsp vanilla

Instructions:

  1. Preheat oven to 180° C.
  2. Mix all the cake ingredients together in a large bowl.
  3. Pour into a greased baking tray (9×13 inch).
  4. For the topping, mix all ingredients in a small bowl, and spread the mixture on the cake batter evenly. Use a knife to swirl in the topping.
  5. Bake at 180° C for 30-35 min.
  6. For the glaze, mix all ingredients in a small bowl and stir well.
  7. Drizzle the glaze on the cake while it is warm.
  8. Serve warm or at room temperature.
