1. Wine Poached Apples

Ingredients

  • 1 cup Red Wine
  • 1 cup Water
  • 3/4 cup Granulated White Sugar
  • 1/2 cup fresh Orange Juice
  • 2 Orange Peel
  • 1 Cinnamon Stick
  • 2 tablespoons Lemon Juice
  • 2 medium Apples, peeled
  • 1/2 cup Yogurt
  • 2 tablespoons Honey

Recipe

  1. In a pan, combine wine, water, sugar, orange juice, and lemon juice with the cinnamon stick and orange peel. Bring it to a boil over medium heat.
  2. Reduce the heat to low and add apples to the pan.
  3. Let it simmer until tender.  This may take about 15-20 minutes.
  4. Once the apples are tender, take out the apples, cinnamon stick and orange peels from the pan.
  5. Increase the heat to high and let the wine mixture cook until it becomes a thick syrup.
  6. To serve, combine yogurt and honey. Place the apples on the yogurt and drizzle with the red wine syrup.

2. Sticky Date and Walnut Pudding with Toffee Sauce

Ingredients for Pudding

  • 90 grams Butter (unsalted)
  • 100 grams Brown Sugar
  • 2 Whole Eggs, lightly beaten
  • 1 teaspoon Vanilla Extract
  • 1 1/2 teaspoons Baking powder
  • 175 grams All Purpose Flour (Maida)
  • 50 grams Cocoa Powder
  • 100 ml Milk, warm
  • 175 grams Dates, or Dried Figs, chopped
  • 3/4 cup Walnuts, roughly chopped

Ingredients for Toffee Sauce

  • 125 grams Butter (unsalted)
  • 175 grams Brown Sugar (Demerara Sugar)
  • 125 ml Fresh cream

Recipe

  1. Preheat your oven to 180C. Grease a muffin pan with butter.
  2. Soak the dates in milk, until soft.
  3. Take a large bowl and add softened butter, brown sugar, eggs, and vanilla essence. Beat together until all the ingredients are well combined.
  4. Add flour, baking powder, cocoa powder, milk and date mixture, and walnuts to the bowl. Beat until the batter is mixed well and glossy.
  5. Fill the muffin tray with the batter, and bake in the oven till you notice the top is set (insert a toothpick to check and it should come out clean).
  6. For the toffee sauce, put a saucepan over medium heat and add sugar and butter to it. Keep stirring continuously until the sugar is dissolved.
  7. Let the mixture bubble for a couple of minutes before adding the cream. Cook on medium heat for about 5-10 minutes or until the sauce is thick, sticky, and glossy.
  8. Serve the pudding with toffee sauce poured over it, along with vanilla ice cream.

3. Baked Rice Pudding with Raspberry Sauce

Ingredients for Pudding

  • 1/2 cup (100g) medium-grain white rice, rinsed, drained
  • 2 cups (500ml) Milk
  • 300ml thickened Cream
  • 1/3 cup (70g) Caster Sugar
  • 1/2 teaspoon ground Cinnamon
  • 1 teaspoon Vanilla Bean Paste
  • 2 strips Orange Peel
  • 2 Egg Yolks
  • 1/4 teaspoon ground Nutmeg

Ingredients for Raspberry Sauce

  • 300g frozen Raspberries
  • 1/4 cup (55g) Caster Sugar

Recipe

  1. Preheat your oven to 160C.
  2. Take a saucepan. Combine rice, milk, cream, sugar, cinnamon, vanilla, and orange peel, over medium heat.
  3. Bring the mixture to boil. Cook for 5 minutes, while stirring occasionally.
  4. Remove the pan from heat and set aside for 10 minutes for the flavours to infuse.
  5. Discard the orange peel from the mixture.
  6. Add egg yolks and stir well to combine.
  7. Pour the mixture into an ovenproof dish.
  8. Bake for 40 minutes, while stirring every 10 minutes. Make sure that the rice is cooked through and the pudding has thickened slightly.
  9. Sprinkle nutmeg over the pudding.
  10. To make the sauce, combine raspberries and sugar in a medium saucepan, over medium-high heat. Cook, stirring, for 5 mins or until raspberries collapse and mixture thickens.
  11. Spoon the rice pudding in serving bowls and top with the raspberry sauce to serve.

4. Wine infused Chocolate Cake

Ingredients

  • 2 cups All-Purpose Flour
  • 3/4 cup unsweetened Cocoa Powder
  • 1 1/4 teaspoons Baking Soda
  • 1/2 teaspoon Salt
  • 2 sticks unsalted Butter, softened
  • 1 3/4 cups Sugar
  • 2 large Eggs
  • 1 teaspoon pure Vanilla Extract
  • 1 1/4 cups dry Red Wine
  • Confectioner’s Sugar, for dusting
  • Chocolate Syrup/Whipped cream, for serving

Recipe

  1. Preheat your oven to 180C. Apply a coat of butter and flour to your cake pan.
  2. Whisk together flour, cocoa powder, baking soda, and salt in a bowl.
  3. Take another bowl and use a handheld electric mixer to beat butter and sugar at a medium-high speed for 4 minutes (till the mixture is fluffy).
  4. Add eggs to this mixture one at a time, and beat till incorporated.
  5. Add the vanilla and beat for 2 minutes more.
  6.  Working in two batches, alternately fold in the dry ingredients and the wine, until just incorporated.
  7. Pour the batter into the cake pan, and bake for 45 minutes (insert a toothpick to check and it should come out clean).
  8. Let the cake cool completely. Dust it with confectioner’s sugar and serve with chocolate syrup, strawberries, or whipped cream.
